When there’s no champagne around.

Or so you may think….

Actually the ol’ Spanish bubbly’s star is in the ascendant, with the finest Catalonian houses now producing the kind of stuff that, before long, rich kids and rappers’ll be spraying on each other and instagramming without having to try and hide the label.

Can’t wait for that.

Before that happens, however, head underground to Copa De Cava – London’s very first authentic cava bar – to explore all of the different cava styles; to appreciate the current quality/price ratios; to eat tapas; and, most importantly of all, to be able to say that you’ve been to London’s first underground cava bar.

Serving up 28 varieties of cava alongside shareable tapas dishes like that old chestnut “roasted Marcona almonds”; seafood; charcuterie; and fillet steaks with manchego shavings, it’s located beneath the earth’s surface in what genuinely feels like one of those underground caves in which cava bottles are stored during their long fermentation process…

And yes, we hang out in caves like that all the time.
