Following the installation of a ‘drinks lab’ behind the bar, you’ll find all sorts of bizarre and unusual ingredients making their way into Eve’s cocktails. Recently, they’ve dropped a new menu, Evolve, based on mixology techniques like carbonation, clarification, distillation, fermentation and freezing. It’s all part of their sustainable philosophy, finding a new use for ingredients from the restaurant above that would otherwise go to waste.
You’ll see this in new signatures like the Coffee Slayer– which pours leftover coffee & cacao husk bitters alongside a 12yo whisky and sustainable vermouth; and the suitably-named Firecracker, which mingles both mezcal and tequila with Eve’s housemade kimchi, smoked salt and pink pepper. Then there’s The Social Butterfly, which distills surplus chocolate (apparently there is such a thing) from one of the restaurant’s desserts, and muddles it with vodka, orange vermouth, Champagne, and ‘hyper melon’, another Eve signature ingredient that condenses every part of a melon into one delicious drop.
Of course, if you’re looking for a little ballast to go with that booze, you can score snacks from the critically acclaimed kitchen upstairs, from duck egg custard with parmesan rind to black truffle hash browns. It’s so convenient…
