An Ex-Chiltern Firehouse Chef is Going Solo with NUALA

Noma. The Chiltern Firehouse. The Fat Duck. The KFC just off Junction 9 on the M25.

Niall Davidson and his team have worked at three of these restaurants. We won’t say which.

And now he’s opening his own joint.

Called NUALA, it’ll be in Old Street, and will have a curved concrete bar and relaxed seating arranged around the brick-lined open fireplace. During the day, this will serve as,

THE RESTAURANT

The menu will feature beef sourced exclusively from Torloisk Highland cows and fresh Cornwall fish, chosen from what’s been caught on the day. Dishes will include bone marrow doughnuts and flamed clams in cider; clay-baked spider crab with Indian spices; T-bone steak with saison sauce and fries; or suckling pig and fireplace cabbage.

THE BAR

The place will take its cues from Irish pub heritage, with a large mahogany bar, and pictures swinging from the ceiling that come from the original Guinness archives in Dublin. Head Bartender and resident Dubliner, Lauren Taylor (formerly of Hawksmoor Spitalfields), will put together the cocktails, which will be whiskey heavy, and “pack a punch”.

Which hopefully includes some punch.
