Probably because the map belonged to a guy in the crowd.
But then, there are people who draw up their own maps. Which is exactly what Ryan Chetiyawardana, aka Mr. Lyan, has done with his first solo bar venture.
After many successful years at Edinburgh’s Bramble Bar, Chetiyawardana has brought together his expertise in mixology and professional chef training to create White Lyan, a bar where drinks are premixed, prepared daily and simply poured out for you at the bar.
You see, Chetiyawardana and his team are perfectionists. By premixing, they aim to control every possible variable in the construction of your drink, right down to minerality and vessel thickness. It’s also the first bar to completely avoid using perishables – no lemons, no limes, no ice – to ensure that the flavours permeate right through to the very last drop, which also happens to make it one of the least wasteful joints in town.
So as you approach the smooth black bar, as sleek and minimalist as the activity behind it, you’ll order from a list of carefully designed house drinks, all created with special Mr. Lyan spirits or branded ones that have been reconstructed and refined to meet their exacting standards. Combined with unconventional ingredients, this results in concoctions like the Beeswax Old Fashioned, which combines Mr Lyan Scotch with a ‘beeswax egg’, or Ribs, with Mr Lyan Bourbon, chipotle, mint tea and rosewood.
Every few months also sees a guest menu, with current offerings including the VR cocktail, which promises to transport you to a sunny summer’s picnic by mixing up house gin with lemon meringue, musk, something called ‘artificial sunshine’, and, inevitably, grass, and the Flashback Fix, which twists scotch with rhubarb acid, crystal dairy and peat.
Luckily for you, if you want to try this at home you can simply grab one of the bottles to take away.
Which is the only part of this that doesn’t sound like rocket science.
