You win some. You lose some. You eat some.
And at Lyle’s – which has recently added to its incredible reviews with a shiny new Michelin star – it’s the latter. See, they put on pheasant/partridge/wild animal-filled game evenings every year, and to make sure they reeeally push the boat out, they add to their already talent-saturated cast of cooks by bussing in a group of five fellow chefs from some of the most exciting new restaurants across the globe.
The chefs this year include Luke Burgess, erstwhile chef patron of Tasmania’s Garagistes; Joaqin Cardoso, previously cooking up a storm in France and now based in Mexico City; Rio’s Rafa Costa e Silva of the multi award-winning Lasai; Angela Dimayuga from Mission Chinese Food in NYC; and Aussie Daniel Puskas, recipient of the prestigious Josephine Pignolet Best Young Chef award.
Considering this will be the first time many of the chefs have prepared game, head chef James Lowe very sensibly invited the group to The Cairngorms in Scotland, where, in what we can only imagine to be a Revenant-style grapple between beast and man, they learnt the ways of game hunting. Deer were stalked. Duck was shot. Salmon was absolutely fished.
And the result of all this? A mystery set menu geared around the different individual specialisms and native cuisine of each chef.
The only thing you can be sure of is that you will win.
