The Pollen Room serves cocktails.
And they’re not to be sniffed at.
It comes from award-winning cocktail maestro Anya Montague, who’s collaborating with the team at glorious seasonal eating spot, Perilla, on a pop-up botanical bar, serving cocktails crafted with home made infusions, herbal extracts and weird and wonderful plants foraged locally. It’s a menu echoed by bountiful wild floral displays cascading around the restaurant courtesy of florist Emily Bayliss, with whom Anya is planning to open a more permanent version of the bar later in the year.
Each drink is designed to pair with certain dishes on the Perilla tasting menu, and will evolve as the dishes do, but you can expect concoctions in the vein of Purslane, made with Norwegian gin, pickled sea purslane and home-made vermouth, and Nettle – a mix of white nettle cordial, cow parsley, a tang of citrus and 12 year whiskey.
There’s a big focus on well-sourced produce and sustainability (Anya comes to this straight off the back of the wastED pop up by Dan Barber), and the two-week residency is set to culminate in a one-off supperclub; a reprise of a project the pair first ran in Hong Kong with their chef friend, Mina Park. She’ll be creating a slap-up seasonal menu with a similar emphasis on using responsibly-sourced and botanically-infused ingredients, all designed to complement the drinks menu.
Which means it would probably be wasteful not to try all of them…
