London's Hottest Chefs Are Steering The Plough

In an alternate universe somewhere, a couple of Londoners are gearing up to open a bar called “I Wanna Be Your Vacuum Cleaner.”

But in this current dimension of the cosmos, they’ve decided to name it after a different line from John Cooper Clarke’s poem: You Call The Shots.

It is, after all, a more fitting choice for a bar – especially one with plans to invite in a regularly changing line-up of guest chefs to let loose on the pans and rustle up whatever bar snacks they’d feel like enjoying with a pint.

And it’s already shaping up extremely well. Founders Emma Piggott and Jonathan Mercer already have a great track record with The Plough in Homerton and The Prince Arthur in London Fields (which is currently hosting resident chef Joe Couldridge to great acclaim) – so their little black book is full of esteemed chefs. And in anticipation of the bar’s opening in September, they’re running a series of takeovers at The Plough so you can get a taste of what’s to come.

The opening stint, from 8th June, will be covered by Mystic Burek‘s Spasia Dinkovski. Her Macedonian pastry pies have been drawing pilgrims down to Sydenham since she opened her first bricks and mortar spot last year, but here she’ll be trialling a new concept inspire by Balkan kafanas (café-pubs that revolve around coffee, booze and live music). It’s already booked up, but you might just get lucky with a walk-in…

Following that, you can expect appearances from Joe Couldridge, popping over from the other pub; probably London’s next cult chef, Paris Rosina (who gives the loveable ‘mundane’ grub of a 90s childhood a fine dining twist); beloved Thai supperclub Ginn Khao; Island Social Club founder and roti queen Marie Mitchell; and many more – in fact, there’s pretty much someone new in every weekend from June till mid-August. Here’s the full line-up:

  • 8th June: Spasia Dinkovski [SOLD OUT]
  • 13th – 15th June: Joe Couldridge
  • 21st – 22nd June: Paris Rosina
  • 27th – 28th June: Swilipino (TBC)
  • 4th – 6th July: Vin’s Pizza (TBC)
  • 11th – 13th July: Floc x Forts (Margate)
  • 18th – 20th July: Pasta Slut
  • 25th – 27th July: Marie Mitchell
  • 1st – 2nd August: Ginn Khao
  • 8th – 10th August: Passa Passa

As for the bar itself? Seems like it’ll be cosy, with seats for 38 and room for another 60 punters standing. And backing up the evolving food offering will be a quality drinks list of fancy cocktails, great wines and beers on tap.

Sounds like they’ll be cleaning up.

NOTE: You Call The Shots is set to open in September – you can keep an eye on their progress here. Meanwhile, you can book in for the summer preview series at The Plough right HERE.
