Bubala Shoreditch | Vegetarian Middle Eastern sharing plates
Fun fact: Bubala is a Yiddish term that loosely translates to ‘darling’ or ‘sweetie’.
Well, bubala, do we have some good news for you.
Because after a year of sell-out pop ups & supper clubs, vegetarian restaurant Bubala has finally found its first permanent home on Commercial Street in Spitalfields, and is due to cut the ribbon this autumn.
So what’s all the excitement about?
Well, to put it bluntly, the pedigree is fantastic: running the front of house will be Marc Summers (fresh from his role as the GM of Berber & Q), while the kitchen is headed up Chef Helen Graham, who’s manned the pans at such Middle Eastern titans as The Palomar, The Barbary and The Good Egg.
As with their various pop ups, she’ll be taking the humble vegetable and putting it at the centre of the meal – In fact, the entire menu is vegetarian, and is broadly inspired by the modern cafes of Tel Aviv. Sharing-style dishes will include the likes of fried aubergine with zhoug and date syrup; cabbage braised in pomegranate with zatar chimichurri; and confit potato latkes served with a garlicky toum (it’s like Levantine aioli).
To drink, there’ll be red & white wine on tap as well as a few Middle Eastern bottles on top of that, and if the place is anything like its pop up predecessors, you can expect a healthy selection of cocktails, too.
