Talking about PYRO without slipping into fire-based wordplay is basically impossible.
It’s not even a temptation – the puns just erupt, uninvited. Why? Because this place is one of the hottest new openings of the year. The chef Yiannis Mexis is on fire, having headed up some of the best multi-Michelin Star draped kitchens in the city. And his modern Greek menu is literally scorching, seared over live flames in the venue’s Athenian-stye taverna by London Bridge.

Mexis has enjoyed a majestic ascendency through London’s culinary scene, cooking in some of the city’s most acclaimed kitchens and winning both praise and industry garlands along the way. PYRO is the work of Yiannis Mexis, a Greek native whose CV glitters like a damn constellation. He’s moved from Elystan Street (one Michelin Star), to The Ledbury (three Michelin Stars), to Petrus (one Michelin Star), and finally HIDE (one Michelin Star) where he was head chef.

We’ve been excited about PYRO since it was a twinkle in Mexis’ eye that was due to open “somewhere in Borough Market”. Now that it’s open, it’s clear the fire has caught. Exactly as the name suggests, fire sits at the heart of the PYRO experience. The open kitchen houses a massive open fire, where meat, seafood and vegetables will be scorched to perfection, creating dishes that artfully combine the rustic allure of casual Greek dining with Mexis’ state-of-the-art Michelin-informed technique.
Expect whole charred aubergine served up with rich tomato stew, flame-grilled Angus ribeye with bone marrow, barbecued octopus in spiced red wine with yellow spit pea, and whole Cornish turbot served with smoked bayleaf (if anyone can ensure that bayleaf actually has a taste, it’s Mexis) and the piquant Greek lemon salad dressing ladolemono.

And it’s just as much about the drinks. Ana Reznik—previously of the Bauhaus-inspired Bar with Shapes for a Name—is behind the cocktail menu, which leans into grown-up Mediterranean flavours. There’s also a strong wine list featuring several independent Greek producers. You can enjoy it all in PYRO’s huge open-air garden, which stays open until 1am Monday through Saturday—ideal for drawing out the whole ‘one more drink’ ritual well into the night.
So head along before the Michelin inspectors get in…
…and try not to overdo it on the flatbread.
