Sake no Hana | St James’s Restaurant
Sake no Hana literally means “sake flower”.
And boy, do they have some stuff for you to get your tulips around.
From serial restaurateur Alan Yau (the man behind Hakkasan & Yauatcha), SNH is built like a miniature urban forest with wood inventively used on every surface, from the beautiful furnishings, to the geometrically patterned ceiling, to the window blinds – each made from a sheet of wood so thin as to almost be transparent.
The style of food is rather rare in London – it’s called ‘kaiseki’, and it refers to the type of multi-course meal that walks you through small plates, sashimi, grilled dishes, tempura, sushi, and desserts. Breaking it down, that means if you spring for the whole shebang, you can expect –
Small plates – like sous-vide and sansho-glazed octopus, or fried aubergine with fresh fig and roasted sesame miso sauce.
Tempura – including spiny lobster with pepper and seasonal vegetables
Sushi & Sashimi – featuring 5 types of tuna, hand dived scallops, sea urchin, and jumbo sweet shrimp
Charcoal grilled dishes – such as Chilean sea bass with Champagne yuzu miso sauce, or Japanese Wagyu beef cooked at your table
Pot Rice – like their black cod iron pot rice, and
Dessert – you can’t really go wrong with caramelised apple mille-feuille with sesame, green apple and yuzu sorbet.
Washing all of these multitudinous courses down, there are of course a select few wines (the best of which reside in their ‘oshouban’ menu, designed specifically to pair well with seafood); house cocktails, and dozens upon dozens of sakes (your sake sommelier will guide you through them, don’t worry). Which should you go for?
The clue is in the name.
