When the Hoxton Hotel realised that their latest opening – a boutique hotel just off the South Bank – had a rooftop with panoramic views over London and the Thames, it must have felt like a right albatross around their neck.
So they’ve done the only reasonable thing, and turned it into a rooftop restaurant and terrace with a raw bar, stunning views and an indoor firepit with stool seating: The Seabird.
Set to open on 6th September, it’s coming to you from the team behind Brooklyn’s Maison Première, undoubtedly one of the best bars in New York. Known for its oyster happy hour, knockout cocktails and quirky vintage setting, they’ll be flying a lot of that across the pond. The Seabird will apparently boast London’s longest oyster list, a marble-clad raw bar, and a heated terrace overlooking the city from 14 storeys up.
The menu is set to focus strongly on seafood with a Mediterranean accent, with dishes like grilled Cornish plaice with Morecambe Bay shrimps and capers, and a Basque-style Bouillabaisse among the opening numbers. It’ll all be paired with frozen, bottled or on-tap cocktails, and a European-led small producer wine list.
