The team from cocktail bar Three Sheets in Dalston apparently give a sheet about food too, because they’ve opened a bistro.
It’s called Top Cuvée, and it’s in Highbury. They’ve enlisted the help of head chef Dan Miller (who’s come fresh from starring roles at the Naughty Piglet and The Harwood Arms) and Brodie Meah, who helped launch Dinner by Heston over in Melbourne.
The vibe inside is clean and simple, with a lot of wood, white tile, and pendant lights, in the vein of a simple Parisian bistro. They’ve kept a few holdovers from Three Sheets too: the walls are completely bare save for a single large mirror, and there are a couple of marble-topped tables to give everything a dash of class.
The menu follows a similar Parisian inclination, with small bites like garlic saucisson; chorizo du pays Basque; or some smoked duck rillettes with cornichons. The larger offerings include a hearty beef fillet & smoked eel tartare with horseradish & dill oil; and some tender braised pigs cheeks with smoked celeriac and hazelnut pesto. Then there’s the cheese – it rotates, but includes interesting curds like a 24 moth Gouda, some Gabarre Goats, and a Bleu de Auvergne.
And of course, this coming from the Three Sheets team, there are cocktails too – but in an effort to make this a proper wine bar, they’re all wine based. The Margarita has orange wine. The Martini uses a natural wine vermouth. The Old Fashioned is sweetened with red wine syrup – and of course to go with that…
