Shoreditch has been suffering a lack of charcuterie-heavy restaurants from celebrated French chefs recently.
Well, consider it cured.
Because Tratra has now opened up in the basement space of Boundary, and it’s helmed by esteemed kitchen commander Stéphane Reynaud. Raised by pig farmers, he currently has nine cookbooks to his name, recipes from which feed into the menu at his lauded Parisian restaurant. This is his first, not-so-tentative step outside the continent.
The space itself projects a laid-back classiness, neatly blending the hipsters vibe of the neighbourhood (bare brick walls, an open kitchen, etc.) with the sleek elegance befitting a classic French restaurant (white tablecloths, plush seating, etc.) in keeping with the theme of the restaurant: ‘Tratra’ is a colloquial French term meaning ‘traditional with a modern twist’. Let’s start with the charcuterie. Instead of merely offering standard, off-the-shelf salami, Reynaud has given his a modern upgrade – you’ll find house-made varieties like pork & gingerbread; venison & blackcurrant; rabbit & chorizo; duck & orange, and many more.
Beyond that, starters include razor clams with seaweed & sugar snaps; or eggs with crispy shallots. Moving up, the mains find grilled prawns with confit fennel; suckling pig crepinette (a flattened sausage) with dates & creamy mash; and huge lamb shoulders slow-cooked for seven hours with a provencal style sauce, which the menu reliably informs us is enough for three of four to share “or two Frenchmen”. THE WINE LIST
Rather than simply splitting it into regions, colours, or grape, the list here is rather usefully divided into categories like “Gutsy & Robust Reds”, “Old & Eclectic”, “Sweet & Luscious”, “Natural & Biodynamic”, etc. And they’ve curated it well too, with only a few dozen bottles rather than hundreds. It’s like they took the old-fashioned way of doing things and said,
