Ollie Dabbous has quite some barracks.
Specifically, the Chelsea Barracks Kitchen which is going to be popping up at the Chelsea Flower Show from the 21st-25th May. And after opening two restaurants (Dabbous & HIDE) which both won Michelin Stars within months of cutting the ribbon, it’s strangely refreshing to know that this 120hr pop up probably won’t get one… but this is Ollie Dabbous, so we’re not ruling it out completely.
The place itself will be set in the “culinary gardens” of the ultra-luxe Chelsea Barracks development. It’s a stone’s from the flower show itself, and it means that a lot of the produce used on the menus will come directly from the surrounding patches of greenery. The venue will be split up into three parts: a fine diner, a casual deli, and a bar.
Those heading to the fine diner will be able to expect a flower show-inspired menu, including starters like candy-striped beetroot with marigold; salmon tartare with iced eucalyptus; and coddled eggs with smoked butter & mushrooms. The larger dishes will involve barbecue Ibérico pork with toasted sweetcorn & white miso; or some light pearl barley with aged parmesan & summer vegetables. And finally for dessert, there are some glorious-sounding numbers like jasmine ice cream with “this morning’s ricotta”; or orange blossom doughnuts.
The deli & bar areas will be take both bookings and walk-ins, and start at breakfast with malted pain au chocolates; classic croque monseiurs; and their version of avo on toast (it has toasted toasted Angelica seeds). Then there are deli salads & charred flatbreads for lunch, and finally if you’re just after something quick from the bar, then you can get some casual home-cured goose with fenugreek.
