Creating the right environment for probiotic bacteria takes guts.

And that’s precisely what the people behind Soho pop up bar Kultured have; specialising in probiotic tonic, English spirit, and wines as well as some fermented foods to go with them.

Running until the end of February 2018, the space itself is a shade fancier than your average, run of the mill pop up, taking up a gorgeous Great Windmill Street townhouse and filling it with jars, bottles, and ferments of every description. On the menu you’ll find:

THE DRINKS

Cocktails include the all-English likes of their Turbo Gin and Tonic (gin, espresso, black pepper tonic); a Winter Kir (Harrow and Hope sparkling, Victory bitters); and a Mulberry Chocolate Tonic (100% dark chocolate ganache, mulberry gin, sea salt). And to soak it up there’s,

THE FOOD

Matching the mixeds, they’ve got a lineup of similarly aged food, including East End bagels with salt beef & kimcheese; some whipped bone marrow with fermented chilli, smoked salt and toast; or black rice with avocado, a little green kimchi, and sesame tamari brittle.

Which is a snappy name.
