The Michelin Starred Chef At Kol Is Prepping A 2nd Culinary Act

Like Kol?

Well, you might just be fonder of Fonda.

Because it’s going to be uberchef Santiago Lastra’s follow up to his Michelin Star winning, World’s 50 Best List heavyweight (currently no.23) Mexican masterpiece – only this one will be a lot more personal. That’s because it’s named after a fonda, which is basically a cozy, unpretentious, family-style Mexican diner that’s more about soul than style, giving it a more homely feel.

That said… Lastra has chosen Mayfair’s Heddon Street to put it on, which is about as far away from ‘unpretentious’ and ‘family-style’ as it’s really possible to get. But we aren’t exactly rubbing shoulders with rural Mexico here either, so it’s swings and roundabouts really. And anyway, the restaurant group ponying up the cash for all this are MJMK, who happen to also run the rather nice Casa Do Frango on the same street. So maybe they get a discount or something.

The space they have lined up sounds good too – as with the menu, the the idea is for it to draw broadly from Mexico’s lesser known regional goodies, styling the place after “the old haciendas of the Yucatan”, and dressing it with “the textiles and crafts of Guanajuato”. And as for that menu? Apparently it’ll be based around the comal, which is the flat, circular griddle used for tortillas. Apart fro, that, there’s a slight absence of information about the dishes they’ll be cooking up. But, as they say, absence only makes the heart grow…

…something or other?
