The Brat Team Is Coming To Soho

Tomos Parry is about to hit his peak.

That is, he’s imminently going to open Mountain, his follow up from the Michelin Starred Brat

…which for almost anyone else actually would be their peak. But for a chef of Tomos Parry’s talents the ceiling is, for want of a better word, mountainously high.

Brat opened in Shoreditch back in 2018, and was instantly a roaring success, winning a Michelin Star within its first year of service. It was the debut restaurant from Mr Parry, who has combined his own Welsh heritage with the techniques he perfected while travelling through coastal towns of the Basque region to create what he describes as a more “instinctual and primal style” of cooking, slinging well-sourced ingredients onto a wood-fired grill.

So, back to Mountain. It’s going to have the same team and the same philosophy as Brat. You’ll find it, when it opens this summer in the former home of Byron Burgers down on Beak Street. It’s not only a beautiful old building, with lovely brickwork and huge windows, but it’s pretty massive too – it’s all built around a central staircase clasped in cast iron fittings that leads down to the second, subterranean floor, which will have its own burr poplar timber bar stacked with vinyl & cocktail shakers.

As for the food? Expect the likes of pink bream split & scorched on the plancha grill; plates of wood-grilled lamb chops; whole Anglesey lobsters in a caldereta-style braise; and raw Carmarthen prawns with wild asparagus. And that bar will have vermouth on tap to go into citrus spritzes & inventive cocktails. Finally, the wine will be taken care in collaboration with the team at Noble Rot.

Hell, this place may even be better than Byron Burger.
