Not Native Guest Series | Quirky Supperclubs
A guest series is pretty much by definition not native.
But London Bridge restaurant Native are taking it doubly literally, not only inviting guest chefs to come in and take the reins for their upcoming series of supperclubs, but showcasing ingredients sourced from non-native species that are now found in Britain.
The feasts will take place on a few select Mondays between now and late November, and comprise the following line-up:
- Whole Beast – 30th September
Sam Bryant and Alicja Specjalna met while working at Peckham’s Coal Rooms over a blazing fire. They’re now combining their love of an open flame with a nose-to-tail philosophy. Their menu is TBA, but you can expect an awful lotta offal.
- Olia Hercules – 7th October
Cookbook author and queen of the residency scene, Olia Hercules will be serving up a menu drawing together all manner of unusual ingredients. Expect a five-course feast variously involving oysters with chilli; flatbreads stuffed with caramelised onion and nettle; a Georgian boar soup; and Japanese knotweed sorbet.
- Goatober – 21st October
This event will celebrate “the full circular story of goat – from milk to meat to leather”. Thankfully it’s less of a circle and more of a line, but it’ll see all the series chefs come together for a banquet of caprine delicacies, with a pop up leather goods shop to browse, too.
- Tom Hunt – 25th November
Tom Hunt’s the eco-chef behind Poco, a low-waste eatery that only uses ingredients from within 100 miles (and precisely no clingfilm or tinfoil). Basically, he’s a dab hand with a foraged leaf or two, so he’ll be in his element for this supperclub.
