After the cruel games that tapas can play when it serves up three prawns to four people, paella comes as a pleasingly hearty champion of Spanish cuisine.

So it seems strange that London doesn’t already have a restaurant purely dedicated to the stuff.

At least not yet.

Because Victor Garvey, the man behind the excellent Rambla in Soho, is planning on opening just that. It’s going to be called Bar Jaleo (named for “a lively dance of Andalusian origin”) and you’ll find it on Old Compton Street.

The details are a little scant at the moment, but as you can see from their CGI mockup, it’ll be focused on counter seating, with a huge, centrepiece paella dish constantly on the go, and from which they’ll plate up speedy dishes and even to-go boxes of the stuff.

Sounds like Mr Garvey will be the victor once more.
